The Godfather I: Clemenza Spaghetti Sauce

My love surprised me with some Christmas movies and proposed to stay home last Saturday to relax. He didn’t came back with Beethoven, Home Alone, The Holiday or another romantic comedy, but The Godfather Trilogy hahaha.

I never watched it because I thought it was too macho, violent and didn’t want to go into the ‘its-classic-hype’. And yes men love this movie, because of their fantasy being a part of the Maffia haha Well, I’ve learned some things after watching all Godfather’s in a row: Godfather I was very good, loved Sonny, family comes first and Clemenza’s Sugo Casa!

Clemenza (Richard Castellano) teaches young Michael (Al Pacino) how to cook spaghetti sauce if it happens that he needs to cook for 20 people. The scene was from the Godfather I, 1972 in the Corleone kitchen after Micheal couldn’t say I love you back to Kay (Diane Keaton) on the telephone: Booo!!!

Clemenza to Michael - “You see, you start out with a little bit of oil. Then you fry some garlic. Then you throw in some tomatoes, tomato paste, you fry it; ya make sure it doesn’t stick. You get it to a boil; you shove in all your sausage and your meatballs; heh…? And a little bit o’ wine. An’ a little bit o’ sugar, and that’s my trick.”   

And all with feeling off course. A tip I once got was to use one garlic clove per person and enough olive oil to sauté it in. You can use fresh tomatoes or canned ones with preferably organic Pomodori. A can of 300gr is enough for two I guess. The meatballs should be made in advance and personally love this meatball recipe from Jamie Oliver. You don’t need to follow the recipe precisely but get to know the basics for the meatballs.
