Winter coleslaw

The winter brings interesting and dull veggies such as cabbage. Just found out you can do a lot with it. I received all kinds of cabbage in my weekly treats from the local food exchange program and was tired of stir frying it and making stew with red cabbage, balsamic vinegar and apples. 

I was thinking about  a winter salad which was easy to make using ingredients I had home (red, white cabbage, apples and walnuts) with the help of BBC Food!! The best source for help in the kitchen. 

I finely sliced half of a red and white cabbage and mixed it in a big bowl with finely chopped shallots. Made this awesome mayonnaise from the Coleslaw recipe by following the 4 easy steps using elderberry vinegar since I didn’t have red wine vinegar. Never made mayonnaise before, but this recipe made it easy to make your own!

I didn’t have carrots, but threw in two apples cut in julienne and walnuts. Awesome! I think you can use all kinds of vegetables such as chicory or fennel too.The salad was ready in less than 30 minutes and approved to bring to a birthday brunch. Pfeeww.
