Steak salad. Note to self…Marinate small pieces of steak in sesame oil, soy sauce and crushed garlic. Season and put it on the side.In the meantime cut some onions, cucumber, any salad you have, spring onions, tomatoes and some chill without the seeds. Fry the onions in some olive oil add the steak and bake until the steak is ready. Serve all vegetables with the meat on top. Sprinkle the spring onion and chilli over the meat and salad. Squeeze some lime or lemon juice over the salad if you like. Enjoy :)

Winter coleslaw

The winter brings interesting and dull veggies such as cabbage. Just found out you can do a lot with it. I received all kinds of cabbage in my weekly treats from the local food exchange program and was tired of stir frying it and making stew with red cabbage, balsamic vinegar and apples. 

I was thinking about  a winter salad which was easy to make using ingredients I had home (red, white cabbage, apples and walnuts) with the help of BBC Food!! The best source for help in the kitchen.

Cherry tomato and lamb lettuce salad 
This one is easy, peasy! Ideal for lunch, a picknick or as a side dish. I made an easy dressing made of:- olive oil - balsamic vinegar - a bit mustard - thyme - salt and pepperUse twice as much olive oil as vinegar. Make sure you always have extra virgin olive oil for salads and vinegar like balsamic or rice vinegar :). And if you’d like to spice it up, replace mustard with thinly sliced red pepper without the seeds and a grated clove of garlic.
Wash the lettuce, throw it in the bowl of dressing and ad sliced cherry tomatoes.Stir, serve, eat ;)

Mackerel Salad

Dear friends,

I finished my delicious mackerel salad earlier and totally forgot to make a picture of it! No visual this time, but I’d like to share my freestyle with you. As you can see in the picture in my previous post I received a smoked mackerel this Saturday with a brown sour dough bread and some lettuce. I barely woke up, was very hungry and decided to make something ‘quick’ of what I had.

It fascinates me how creativity could make something sweeet out of a few ingredients you have in your fridge. So, I threw the following in a bowl:

1. Pieces of smocked mackerel
2. Finely diced shallot
3. Lemon zest and a bit of juice
4. Salt and pepper
5. Left over thick Greek yoghurt
6. Finely chopped flat parsley

Stirred all ingredients and served it with a leaf of lettuce on a thick slice of warm bread!

Now use your imagination ;)

PS: If you don’t have mackerel, you can use other smoked fish like trout or eel.
You can replace the shallot with thinly sliced spring onion or chopped flat parsley with chives.
And if you don’t have thick yoghurt, you can use crème fraiche. It will taste different though, but you can replace it.
